Anticuchos - cooking recipe

Ingredients
    2 beef hearts
    10 Tbsp. ground hot pepper
    1 Tbsp. ground achiote
    2 c. vinegar
    1 c. minced garlic
    2 1/2 tsp. cumin
    salt and pepper to taste
    1/4 c. olive oil
    4 doz. small potatoes
    hot salsa
Preparation
    Wash beef hearts well, removing all nerves and fat.
    Cut into 1-inch cubes.
    Place in enamel bowl, along with all other ingredients.
    Marinate for 24 to 48 hours.
