Spiced Peach Salad - cooking recipe

Ingredients
    1 (16 oz.) can sliced peaches in juice
    1/4 c. white vinegar
    1/4 c. sugar
    1/4 tsp. pumpkin pie spice
    1 small pkg. sugar-free lemon gelatin
    1/2 c. cold water
Preparation
    Drain peaches, reserving syrup.
    Chop peaches coarsely.
    Place syrup, vinegar, sugar and spice in a small pan.
    Bring to a boil. Simmer, stirring constantly until sugar is dissolved.
    Add gelatin and stir until dissolved.
    Remove from heat.
    Stir in cold water.
    Pour into serving dish or mold.
    Refrigerate until set. Yields 4 servings.
