Mark Twain'S Favorite Mince Cake - cooking recipe

Ingredients
    1 c. margarine
    1 c. sugar
    4 eggs
    2 c. flour
    1 tsp. nutmeg
    1/2 tsp. salt
    1/2 tsp. baking powder
    1/4 c. brandy
    1/4 c. heavy cream
    1 (9 oz.) pkg. mincemeat, crumbled
    2 Tbsp. flour
Preparation
    Cream margarine and sugar.
    Add eggs one at a time, beating well after each addition.
    Sift dry ingredients together.
    Combine brandy and cream.
    Add flour mixture, alternating with brandy mixture.
    In a small bowl combine crumbled mincemeat and 2 tablespoons flour. Mix until mincemeat is well separated.
    Fold into batter.
    Spoon batter into a greased 9-inch tube pan.
    Bake at 325\u00b0 for 1 hour.
    Allow to cool in pan 10 minutes, then turn out onto wax paper.
    It is said this cake is good sliced and toasted and served with coffee.
