Sweet Potato Muffins - cooking recipe
Ingredients

1 3/4 c. sifted all-purpose flour
1 Tbsp. baking powder
1 tsp. salt
2 large eggs, lightly beaten
3/4 c. milk
1 1/4 c. mashed sweet potatoes
1/4 c. butter or margarine
2 Tbsp. brown sugar, packed
1/2 tsp. cinnamon
Preparation

Heat oven to 425\u00b0.
In medium bowl, sift together flour, baking powder and salt.
In another bowl, mix remaining ingredients until well blended.
Lightly coat muffin tins with butter or margarine.
Fill about 3/4 full with batter.
Bake 20 to 25 minutes or until browned.
