Petite Cheesecakes - cooking recipe
Ingredients

2 (8 oz.) pkg. cream cheese
2 eggs
3/4 c. sugar
1 Tbsp. lemon juice
1 tsp. vanilla
1 can pie filling (cherry or blueberry)
1 box vanilla wafers
Preparation

Beat softened cream cheese with mixer.
Add remaining ingredients, except fruit and wafers; mix well.
Place paper bake cups in muffin pan.
Put one vanilla wafer in bottom of each bake cup.
Cover each wafer with about 2 tablespoons cream cheese mixture.
Bake at 275\u00b0 for 25 minutes.
Cool and top each little cheesecake with pie filling.
Refrigerate.
