Make-Ahead Mashed Potatoes - cooking recipe

Ingredients
    6 medium potatoes (about 2 lb.)
    4 oz. sour cream
    1 (3 oz.) pkg. cream cheese, cut up
    1 Tbsp. margarine
    salt and pepper
    milk
Preparation
    Peel and quarter potatoes.
    In a 1 1/2-quart microwave-safe casserole, combine potatoes and 1/2 cup water.
    Cook, covered, in the microwave on High for 15 to 20 minutes or until very tender. Drain and mash potatoes with mixer.
    Add sour cream, cream cheese, 1 tablespoon margarine, onion and salt and pepper.
    Gradually beat in enough milk to make smooth and fluffy.
    Turn into a greased 1 1/2-quart casserole.
    Cover and chill up to 24 hours.
