Spanish Rice - cooking recipe

Ingredients
    3 Tbsp. Crisco shortening
    1 c. rice
    1/2 onion, chopped
    1 can tomatoes
    salt and pepper to taste
Preparation
    Brown rice and onion in hot Crisco.
    Add juice from tomatoes and water to equal 2 cups liquid.
    Chop tomatoes.
    Add to rice. Salt and pepper to taste.
    Bring to a boil.
    Reduce heat and simmer 15 to 20 minutes.
