Low-Fat Mandarin Blueberry Muffins - cooking recipe

Ingredients
    1 3/4 c. whole wheat flour
    3/4 c. oat bran
    1/3 c. sugar
    1 Tbsp. baking powder
    1 (11 oz.) can Mandarin orange segments in light syrup (undrained)
    2 egg whites
    1 tsp. vanilla
    1/2 c. plus 2 Tbsp. fresh or frozen blueberries
Preparation
    Combine the flour, oat bran, sugar and baking powder and stir to mix well.
    Crush the orange segments slightly and add the oranges and their syrup, egg whites and vanilla extract to the flour mixture.
    Stir just until the dry ingredients are moistened. Fold in the blueberries.
