Mexican Meat Loaf - cooking recipe

Ingredients
    1 lb. ground beef
    1 10 oz. can Ro-Tel tomatoes and green chilies
    1 1/2 c. soft breadcrumbs
    1 egg
    onion, salt and pepper, to taste
    3/4 c. shredded cheddar cheese
Preparation
    Mix beef, sauce, bread crumbs, egg and seasonings together. Bake 1 hour and 375\u00b0.
    Top with cheese and return to oven to melt.
