Carrot Cake - cooking recipe

1 1/2 c. sugar
1 c. oil
2 tsp. vanilla extract
3 eggs
1 1/2 c. flour
3/4 tsp. salt
2 1/2 tsp. cinnamon
1 1/4 tsp. soda
2 1/4 c. grated carrots
1/2 c. chopped walnuts
1/2 c. raisins
1/2 lb. confectioners sugar
1 (3 oz.) pkg. cream cheese
3 Tbsp. butter
Preparation

Combine sugar, oil and 1 teaspoon vanilla in large mixer bowl. Add eggs; beat well.
Combine flour, salt, cinnamon and soda; stir into egg mixture.
Fold in carrots, walnuts and raisins. Pour into 12 x 7-inch glass baking dish, greasing bottom only. Microwave on High for 14 to 16 minutes, turning dish every 4 minutes.
Cool.
