Creamy Potato Salad - cooking recipe
Ingredients

4 to 5 medium red potatoes, cubed (about 4 c.)
2/3 c. low-fat mayonnaise
1 stalk celery, thinly sliced (1/2 c.)
1/2 medium green pepper, chopped (1/3 c.)
2 green onions, thinly sliced or 1/4 c. chopped sweet onion
1 Tbsp. prepared mustard
1 tsp. tarragon vinegar
1/4 tsp. salt
1/4 tsp. pepper
1 hard-boiled egg, coarsely chopped (can use more if you like)
Preparation

Cook and cube potatoes.
Combine mayonnaise, mustard, vinegar, salt, pepper, onions and green pepper.
