Carrot Relish - cooking recipe
Ingredients

1 lb. carrots, diced (about 2 3/4 c.)
1/4 c. chopped green peppers
1 (2 oz.) jar chopped pimientos
1/4 c. vinegar
3 Tbsp. honey
2 Tbsp. finely chopped onions
1/4 c. sugar
1 Tbsp. all-purpose flour
1/4 tsp. dry mustard
1/4 tsp. celery salt
1/4 tsp. salt
Preparation

In
a
medium saucepan, cook the carrots, covered, in a small amount
of\twater for 10 minutes or until crisp-tender. Drain. Return
carrots to pan.
Add green peppers, pimientos, vinegar, honey and onions.
Combine sugar, flour, dry mustard, celery
salt and
salt.
Stir into vegetables.\tCook and stir over medium heat until bubbly.\tCook and stir 3 minutes more. Remove from heat and serve warm or chilled.\tMakes 2 1/2 cups.
