Eggplant Puffs - cooking recipe

Ingredients
    1 medium eggplant (peeled, sliced, and boiled tender)
    1 egg
    1/2 C. sugar
    1 C. flour
    1 tsp. baking powder
Preparation
    Drain and mash cooked eggplant.
    Add egg, sugar, flour and baking powder.
    Drop small amounts from teaspoon into hot deep fat.
    Turn when brown.
    Drain on paper towel.
