Ham And Split Pea Soup - cooking recipe

Ingredients
    2 c. dried peas
    1 c. chopped celery
    1 bay leaf
    2 qt. water
    1/2 c. chopped onion
    1/4 tsp. thyme
    1 ham bone
    1/2 c. diced carrot
    salt and pepper
Preparation
    Wash and sort peas.
    Place in a large pot and add water; bring to a boil and simmer 2 minutes.
    Remove from heat; cover and let stand for 1 hour.
    Add ham bone, vegetables, bay leaf and thyme. Heat to boiling; reduce heat and simmer, covered, for 2 1/2 to 3 hours or until peas are soft.
    Remove bone; cut off meat and dice. Return meat to soup.
    Season with salt and pepper to taste.
    Makes 2 quarts.
