Riverton Squash Casserole - cooking recipe

Ingredients
    4 c. sliced yellow summer squash
    1 c. chopped onion
    1 c. chopped green pepper
    1/4 c. butter or margarine
    1/2 c. coarsely crushed crackers
    2 eggs, slightly beaten
    salt and pepper to taste
    1/2 c. grated Cheddar cheese
Preparation
    Place squash, onion and pepper in a colander over a saucepan containing 1-inch of boiling water and steam vegetables, covered, for 10 minutes or until they are tender.
    Transfer with slotted spoon to a bowl and stir in butter, softened crushed crackers, eggs, salt and pepper.
    Transfer mixture to a buttered 1-quart baking dish.
    Sprinkle top with Cheddar cheese.
    Bake in a preheated 375\u00b0 oven for 45 minutes.
