Zola'S "Eels Of Trasimento"(Seen In Italy At Christmastime) - cooking recipe

1 lb. almonds, finely chopped
1 2/3 c. (white) granulated sugar
2 oz. candied citrine (citron)
2/3 c. candied orange or lemon peel
4 to 6 egg whites
whole almonds (shelled)
dried currants (optional)
apricot jam, heated (for glaze)
Preparation

Chop almonds fine with a large, sharp knife, or do in a food processor.
Mix sugar with chopped almonds and then add citron (cut up candied citron).
Next, add lemon or orange peel (the candied kind).
Add 4 to 6 egg whites and mix until holds together well.
