Lime Zested Salmon(Makes 4 Servings.) - cooking recipe

Ingredients
    4 (4 oz.) salmon fillets
    2 Tbsp. chopped green onions
    2 Tbsp. sherry
    1 Tbsp. fresh lime juice
    1 1/2 tsp. low sodium soy sauce
    1 tsp. peeled and grated ginger root
    1 tsp. vegetable oil
    1/2 tsp. grated lime rind
    1 ripe mango, peeled and cut into 12 wedges
Preparation
    Place salmon in an 8-inch square baking dish.
    Combine onions and next 6 ingredients; stir well.
    Pour over salmon.
    Cover and marinate in refrigerator for 30 minutes.
    Bake, uncovered, at 450\u00b0 for 15 minutes or until salmon flakes easily when tested with a fork.
    Serve with mango wedges.
