Vegetarian Spanish Rice - cooking recipe

Ingredients
    4 to 5 c. rice
    1 to 2 peppers, chopped
    3 to 4 stalks celery, chopped
    1 (28 oz.) can tomatoes
    1 (8 oz.) can tomato sauce
    1 onion, chopped
    salt
    pepper
    1/3 c. cilantro
    1/2 c. Cheddar cheese
Preparation
    Cook Rice: Combine 3 cups water and 1 1/2 cups long grain white rice. Bring to boil; reduce to simmer. Cover and cook for 15 to 20 minutes.
