Galveston Gumbo - cooking recipe

Ingredients
    2 lb. shrimp, shelled and left raw
    2 c. okra (fresh), sliced or 1 (10 oz.) pkg.
    1/4 c. salad oil or part butter
    2/3 c. green onions and tops, finely chopped
    3 garlic cloves, finely chopped
    1 1/2 tsp. salt (hold until last)
    1 tsp. ground black pepper
    1 pt. tomatoes, chopped
    1 Tbsp. gumbo file
    1 tsp. thyme or more to taste
    1/4 tsp. hot pepper flakes
    6 Tbsp. tomato paste or more to taste
    4 c. stock
Preparation
    Saute okra in shortening, about 10 minutes, or until okra appears dry, stirring constantly.
    Add green onions, garlic and ground black pepper.
    Cook about 5 minutes.
    Add stock, tomatoes, tomato paste, thyme, gumbo file and red pepper flakes.
    Simmer 1 hour or longer.
    Add shrimp and cook 3 to 5 minutes.
    Serve over cooked rice.
    Serves 6.
