Welch Rarebit - cooking recipe

Ingredients
    1 lb. cheese, cut into cubes
    1 c. beer
    2 egg yolks, well beaten
    1 Tbsp. butter
    paprika to taste
    1 level tsp. dry mustard
Preparation
    Put beer in pan and boil.
    Add cheese, butter and seasonings. Add eggs and cook a few minutes, until cheese is melted.
    If thick, add more beer.
    Serve over toast.
