Divine Rice Casserole(Serves 12) - cooking recipe

Ingredients
    2 lb. cubed beef or 1 lb. beef and 1 lb. pork, cubed
    1/2 c. chopped green peppers
    1 medium onion, chopped
    8 stalks celery, chopped and parboiled in 2 c. water (save water)
    1 small jar pimentos, chopped
    1 c. Uncle Ben's converted rice
    2 cans mushroom soup
    2 cans cream of chicken soup
    2 cans celery water
Preparation
    Brown meat in a small amount of cooking oil; season meat with salt and pepper or seasoned salt.
    Parboil celery.
    Saute onions and pepper lightly in the same skillet you browned meat in.
    Mix all ingredients together; pour into buttered casserole dish.
    Bake at 375\u00b0 for 2 1/2 hours or until meat is done.
    Makes 1 large or 2 small casseroles.
