Hot Bacon Dressing For Spinach Salad - cooking recipe

Ingredients
    1 lb. fresh spinach or 10 oz. pkg. frozen spinach
    1 medium onion, chopped
    1/4 c. white vinegar
    1 tsp. sugar
    1/4 c. red wine vinegar
    1/4 tsp. salt
    pinch of pepper
    1 1/2 tsp. cornstarch
    1/2 c. canned beef broth
Preparation
    Wash, trim and dry fresh spinach. Saute bacon in a large skillet until crisp.
    Drain on paper towel, crumble and reserve. Saute onion in bacon drippings until soft.
    Stir in vinegars, salt, pepper and sugar. Blend cornstarch and 2 tablespoons of the broth in a small cup. Add remaining broth to skillet. Stir in cornstarch mixture. Cook over low heat, stirring constantly, until thick.
    Pour over spinach, tossing well. Sprinkle with bacon.
