Jazz-Ma-Tazz Stuffed Spuds - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/2 c. each: finely chopped green pepper, onion and celery
    1 to 2 Tbsp. Cajun seasonings
    1/3 c. each: chopped, cooked shrimp, chicken and sausage
    4 large potatoes, baked, hollowed and reserved
    2 c. shredded Cheddar cheese
    2 c. shredded Mozzarella cheese
Preparation
    Preheat oven to 350\u00b0.
    Heat oil in skillet over medium heat. Cook green pepper, onion and celery 5 minutes.
    Add seasonings, meats and potatoes.
    Remove from heat. Stir in 1 cup each cheese. Mound mixture into potato shells.
    Bake for 25 minutes.
    Top with extra cheese.
    Serves 4.
