Polk County (Florida) Potato Salad - cooking recipe

Ingredients
    6 large potatoes, cut in 1-inch cubes
    3 eggs, boiled with potatoes
    2 to 3 celery stalks, chopped
    1/2 green pepper, diced
    1/2 medium onion, diced
    1 Tbsp. prepared mustard
    1 c. mayonnaise (more if you like it wet)
    salt and pepper
    1/4 c. pickle relish
Preparation
    Cook potatoes in boiling salted water until just past crunch. Boil eggs with potatoes.
    Drain and rinse.
    Mix all together; sprinkle paprika on top.
    Chill, but can eat warm.
