Lemon Meringue Pie - cooking recipe
Ingredients

1/2 c. plus 1 Tbsp. flour
1 1/2 c. sugar
1 2/3 c. water
1 1/2 Tbsp. butter
3 egg yolks, beaten
1/3 c. lemon juice
2 Tbsp. grated lemon rind
1 baked 10-inch pie shell
3 egg whites
3 Tbsp. sugar
Preparation

Combine flour, 1 1/2 cups sugar, water and butter in saucepan. Cook until thickened, stirring constantly.
Add beaten egg yolks. Cook for 4 minutes longer, stirring constantly.
Stir in lemon juice and lemon rind.
Let stand until cooled completely.
Pour into pie shell.
Beat egg whites in mixer bowl until soft peaks form.
Add 3 tablespoons sugar gradually, beating until stiff peaks form.
Spread over top of pie, sealing to edge.
Bake at 400\u00b0 until browned.
Yield: 8 servings.
