Lime Jello Salad - cooking recipe
Ingredients

4 oz. pkg. (small) lime Jell-O (NutraSweet okay)
8 oz. container small curd cottage cheese
8 oz. container Cool Whip (lite is okay)
11 to 16 oz. can crushed pineapple, drained (I use the pineapple juice to mix into the Jell-O instead of the 1 c. cold water)
1/2 c. chopped walnuts (optional)
Preparation

In large bowl, make Jell-O according to instructions or with pineapple substitution.
Fold in the cottage cheese, the Cool Whip, then pineapple and the nuts.
Make sure all ingredients are blended thoroughly.
Refrigerate until firmly set (2 hours).
