Homemade Potato Rolls - cooking recipe
Ingredients

2 pkg. yeast
1 1/2 c. lukewarm water
2/3 c. shortening
2/3 c. sugar
1 1/2 tsp. salt
1 c. mashed potatoes
2 eggs, well beaten
7 1/2 c. flour
Preparation

Soften yeast in 1/2 cup warm water.
Blend shortening, sugar, salt and potatoes.
Add well-beaten eggs.
Add yeast mixture.
Add flour and remaining water alternately.
Knead until smooth and elastic; let rise until double in size, then punch down and cover with foil or plastic to keep crust from forming over top.
Put in refrigerator until needed, then make into rolls and let them double in size before baking.
