Cajun Hush Puppies - cooking recipe

Ingredients

1 1/2 c. plain corn meal
1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 egg
1 onion, chopped
1 c. buttermilk
1 large jalapeno pepper, finely chopped (optional)

Preparation

Mix all ingredients in a large bowl.
Drop with a large spoon into hot oil in a deep fat fryer.
Cook until brown, turning with a long wooden spoon.
Great with fried catfish.
Yields 4 servings.
