Spicy Lemon Chicken - cooking recipe

Ingredients
    6 roasted chicken drumsticks
    2 roasted chicken breast halves
    2 c. sliced yellow onion
    1 tsp. salt
    1 jalapeno pepper, seeded and chopped
    1 1/2 c. chicken broth
    1 Tbsp. Dijon mustard
    1/3 c. fresh lemon juice
    1/2 tsp. black pepper
    2 c. thinly sliced carrots
    1/2 c. pimento stuffed olives
    2 Tbsp. oil
Preparation
    Place a large saucepot over high heat and add oil.
    Add onion and jalapeno pepper and
    saute until well browned.
    Add salt, pepper and carrots, cook for 3 to 4 minutes.
    Add chicken broth, Dijon mustard and lemon juice and simmer for 5 more minutes
    Add chicken into the sauce, let simmer on medium-low heat for 20 to 25 minutes.
    Add olives when ready to serve.
