Fiesta Rice - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 small green pepper, chopped (about 1/2 c.)
    1 small onion, chopped (about 1/4 c.)
    2 cans V-8 picante vegetable juice
    1/4 tsp. garlic powder
    1 c. uncooked regular long grain rice
    1/2 c. shredded Monterey Jack cheese
Preparation
    In a 2-quart saucepan over medium heat, in hot oil, cook pepper and onion until tender, stirring often. Add V-8 juice and garlic powder.
    Heat to boiling. Stir in rice.
    Reduce heat to low. Cover and cook 15 minutes.
    Uncover; cook 5 minutes more or until rice is tender and liquid is absorbed, stirring occasionally. Stir in cheese.
