Black-Eyed Pea Salad - cooking recipe

Ingredients
    3 cans black-eyed peas, drained or 16 oz. dry peas, cooked
    1/2 c. cider vinegar
    1/3 c. olive oil
    2 tsp. sugar
    1/4 tsp. ground red pepper
    1 Tbsp. salt
    1/2 c. chopped parsley
    1 clove garlic, minced
    2 celery stalks, thinly chopped
    3 green onions, minced (use blades too)
Preparation
    Mix oil, vinegar and seasonings well.
    Mix all other ingredients and pour seasonings over.
    Mix well.
    Refrigerate 2 hours.
