Cucumber Lime Mold - cooking recipe

Ingredients
    3 Tbsp. boiling water
    1/2 (3 oz. size) pkg. lime-flavored gelatin (about 1 Tbsp. plus 2 tsp.)
    1 Tbsp. mayonnaise or salad dressing
    1/2 medium cucumber, shredded and well drained
    1 tsp. finely shredded onion
    spinach leaves
Preparation
    Pour boiling water on gelatin in small bowl; stir until gelatin is dissolved.
    Stir in mayonnaise with fork until smooth. Refrigerate until slightly thickened, but not set, about 20 minutes.
    Stir in cucumber and onion; pour into 4 ounce mold or 6 ounce custard cup.
    Refrigerate until firm, at least 2 hours. Unmold on spinach leaves.
