Ingredients

1 c. dried lemon peel
1 c. dry grapefruit peel
3 lb. unpeeled zucchini
1/8 tsp. soda
2 c. water
1 c. dried lime peel
1 c. dried orange peel
3 lb. sugar
2 tsp. citric acid
1 box pectin
Preparation

Grate zucchini on small side of grater.
Chop fruit peels into small pieces.
Combine all ingredients except the box of pectin. Bring to a boil, then reduce to a simmer for 30 minutes.
Add pectin and stirring constantly, boil for 7 minutes.
Reduce heat to low and keep warm while preparing into hot canning jars.
Makes 5 pints.
