Chicken-Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1 Tbsp. onion
    1 Tbsp. butter
    1 c. boned chicken
    3 tomatoes
    1 tsp. salt
    Ritz crackers
Preparation
    Cut eggplant from shell.
    Cook onion in butter.
    Add to chicken, eggplant and tomatoes.
    Cook 15 minutes over surface burner; then add egg and salt.
    Fill shell with mixture (or put in dish).
    Cover with buttered cracker crumbs.
    Bake at 375\u00b0 for 30 to 35 minutes.
