Tabouli(Middle Eastern Salad) - cooking recipe

Ingredients
    3/4 c. water (boiling)
    1/2 c. bulgar wheat
    1/2 c. fresh minced parsley
    1/4 c. fresh mint leaves
    1/2 c. finely chopped green onions
    1 tomato, diced
    3 Tbsp. olive oil
    2 Tbsp. lemon juice
    1 tsp. salt
    1 c. diced cucumber
Preparation
    Pour boiling water over cracked wheat.
    Cover and let stand for 20 minutes.
    Add parsley, mint, onion, tomato and cucumbers; toss.
    Combine lemon juice and olive oil.
    Add to mixture.
    Chill and serve on bed of lettuce.
