Paalak Goshth - cooking recipe

Ingredients
    1 bunch fresh spinach
    1 pound chicken, lamb, or beef
    1 tsp. each, garlic and ginger paste
    1 tsp. salt
    1/2 tsp. green chili paste
    1/2 tsp. cayenne pepper
    1/8 tsp. turmeric
    1-1/2 tsp. cumin powder
    1-1/2 tsp. coriander powder
    1 medium onion, thinly sliced
    Cooking oil
    15 fenugreek (methi) seeds
    4 cloves
    2-3 cardamoms
    5 broken pieces of cinnamon
    1 small clove garlic, finely sliced
    1/2-inch piece ginger, finely sliced
    1/2 tomato, sliced
    Few whole green chilies
    2 Tbsp. sliced onion
Preparation
    Marinate meat with garlic, ginger and green chili pastes, salt, cayenne, turmeric, cumin powder, and coriander powder.
    Set aside.
    Wash, drain, and finely chop spinach.
    Set aside.
