South African Raisin Rice - cooking recipe

Ingredients
    1 c. long grain rice
    2 1/4 c. boiling water
    1/2 tsp. grated lemon rind
    1 cinnamon stick (1-inch long)
    1/2 tsp. ground turmeric
    1 tsp. salt
    3/4 c. seedless raisins
    2 Tbsp. butter or margarine
    3 Tbsp. sugar
Preparation
    Sprinkle rice into rapidly boiling water.
    Add the next 4 ingredients.
    Cover; boil slowly for 20 minutes, or until rice is tender.
    Add raisins, butter and sugar; toss lightly.
    Serve hot with meat or poultry.
