Pizzelles - cooking recipe

Ingredients
    1 lb. butter
    1 doz. eggs
    3 1/2 c. sugar
    1 Tbsp. anise oil
    1 Tbsp. vanilla
    1 Tbsp. lemon rind
    1 tsp. salt
    1/2 Tbsp. cinnamon (optional)
    3 lb. flour (about 9 to 9 1/2 c.)
Preparation
    Beat eggs.
    Add sugar and beat well.
    Add butter, melted and cooled.
    Add flavorings, then flour, mix well.
    Make balls and put on hot pizzelle iron.
