Bean Soup - cooking recipe

Ingredients
    1 to 1 1/2 lb. ham hocks
    1 pkg. Portuguese sausage
    3 potatoes, cut into 1 1/2-inch cubes
    2 carrots, sliced
    1 onion, chopped
    1 pkg. fresh string beans, cut into 1-inch sections
    1 pkg. frozen lima beans
    1 can kidney beans
    2 (8 oz.) cans tomato sauce
    1 bunch watercress, cut into 3-inch sections (optional)
    salt and pepper to taste
Preparation
    Boil ham hocks in water in a large (10-quart or larger) pot until meat falls off the bone (about 3 to 4 hours).
    Add remaining ingredients except watercress and cook for an additional hour. Watercress and/or sliced cabbage can be added the last 15 to 20 minutes of cooking time.
