Real Fried Chicken - cooking recipe

Ingredients
    1 small fryer, cut up
    salt
    pepper
    cayenne
    1 Tbsp. squeezed garlic
    1/2 lb. lard
    flour
Preparation
    Wash chicken pieces and pat dry.
    Sprinkle each piece with salt, pepper, cayenne and garlic and rub it in.
    Cover and refrigerate for at least 2 to 3 hours before cooking.
    Heat the lard in a large iron skillet to 375\u00b0 or until it just starts to smoke lightly.
    Just before frying, dredge pieces lightly in flour and fry 2 to 3 pieces at a time.
    Breasts take 12 to 15 minutes, drumsticks and backs 9 to 10 minutes.
    Pieces can be kept warm in a 200\u00b0 oven while frying others.
