Ingredients

2 pounds sirloin
1/4 c. corn oil
2 cloves garlic
1 tsp. salt
1/4 c. soy sauce
1 tsp. crushed red pepper
6 thin slices of ginger
2 Tbsp. dry sherry
1 Tbsp. sugar
Preparation

Slice steak into 2 x 1 inch strips. (Place in freezer for 1/2 hour before cutting, makes slicing easier.) Heat skillet and add oil. Add peppers and ginger to the oil: fry until peppers turn brown. Add the garlic and beef strips, fry until brown. Sprinkle with sherry; and salt, sugar and soy sauce. Cook over medium heat, stirring occasionally until sauce is almost gone, about 20 minutes. Serve over rice.
