Ingredients

6 chicken breasts, boneless and skinless (4 oz.)
2 1/2 lb. jicama, peeled and grated
3 eggs, lightly beaten
1/2 c. scallions, minced
1/2 c. Dijon mustard
flour (as needed)
Preparation

Pound chicken breasts until 1/2-inch thick.
Mix jicama, eggs, scallions and mustard.
Dredge chicken breast in flour and coat with jicama mixture evenly on both sides.
