Chicken Zucchini Casserole - cooking recipe

Ingredients
    6 to 8 chicken thighs
    1 large fresh tomato, chopped
    4 to 6 zucchini, sliced
    1 large onion, coarsely chopped
    olive oil
    salt
    pepper
    Cavender's seasoning
    rice
Preparation
    Cut chicken off bones into bite-size pieces.
    Saute in olive oil.
    Add remaining ingredients.
    Cook, covered, on top of range about 20 minutes. Serve over cooked rice.
