Chicken Salad - cooking recipe

Ingredients
    4 hard-boiled eggs
    2 c. chicken, cooked and chopped
    1 c. finely chopped celery
    1 Tbsp. lemon juice
    1/2 c. mayonnaise
    salt and pepper to taste
    1/4 c. onion, chopped very fine in food processor (optional)
Preparation
    Separate whites from yolks of eggs.
    Mash each separately with fork until fine.
    Add whites to chicken and celery (and onion if desired).
    Mix egg yolk with lemon juice and then mayonnaise.
    Add to chicken.
    Season to taste.
    Serves 4 or can be used for sandwiches.
