Oatmeal Pancakes - cooking recipe

Ingredients
    1 1/2 c. quick cooking oatmeal
    1/2 c. unsifted flour
    1 tsp. salt
    1 Tbsp. granulated sugar
    1 tsp. soda
    3 Tbsp. cooking oil
    2 c. buttermilk
    2 eggs, beaten
    1 tsp. vanilla
Preparation
    Combine oatmeal, flour, salt, sugar and soda; mix well.
    Add oil, buttermilk, eggs and vanilla.
    Mix thoroughly, stirring vigorously.
    Let stand at room temperature at least 30 minutes. Drop mixture from spoon onto greased hot griddle.
    Cook over medium heat until bubbles form on top side.
    Turn and cook.
    Serve with favorite syrup.
    May be mixed night before and kept in refrigerator overnight.
