Mini Cheesecakes - cooking recipe
Ingredients

2 (8 oz.) pkg. cream cheese, softened
2 eggs
1 tsp. vanilla
3/4 c. sugar
1 Tbsp. lemon juice
18 to 24 vanilla wafers
1 can cherry pie filling
Cool Whip
Preparation

Beat all ingredients together (except for wafers, cherries and Cool Whip).
Place wafers in cupcake papers and into muffin or tart tins.
Pour batter over wafers.
Bake at 375\u00b0 for 15 to 17 minutes.
Do not overbake.
Let cool completely.
Top with cherry pie filling, or any other pie filling and Cool Whip.
