Swiss Steak - cooking recipe

Ingredients
    2 lb. beef (round or chuck)
    1 to 2 tsp. salt
    1/4 tsp. pepper
    1 c. flour
    1 onion, sliced
    2 carrots, sliced
    1 1/2 c. stewed tomatoes or canned
Preparation
    Have beef cut 1 or 1 1/2 inches thick.
    Wipe with a cloth. Rub seasoned flour (flour mixed with the salt and pepper) into steak or pound in with wooden mallet.
    Brown meat in a little fat in a heavy skillet or Dutch oven (brown on all sides).
    Add veggies; cover and simmer gently for about 1 1/4 hours, or until meat is tender.
