Baked Chicken Reuben - cooking recipe
Ingredients

4 whole broiler-fryer chicken breasts, halved and boned
1/4 tsp. salt (optional)
1/8 tsp. pepper (optional)
1 (16 oz.) can sauerkraut, drained thoroughly
4 slices (each about 4 x 6-inches) natural Swiss cheese
1 1/4 c. Thousand Island salad dressing
Preparation

Place chicken in casserole dish.
Sprinkle with salt and pepper, if desired.
Be sure to press out excess liquid from sauerkraut, then place sauerkraut over chicken. Top with Swiss cheese.
Pour dressing evenly over cheese. Cover with foil and bake in a 325\u00b0 oven for about 1 1/2 hours (or until chicken is done).
May sprinkle with 1 tablespoon parsley, chopped, if desired.
Makes 4 servings.
