Cottage Potato Salad - cooking recipe
Ingredients

2 c. cubed, cooked potatoes
2 hard-cooked eggs
1/4 c. sour cream
1 Tbsp. Italian dressing
2 c. cottage cheese
1/2 c. chopped celery
1/3 c. sliced radishes
1/3 c. sliced ripe olives
3 Tbsp. thinly sliced green onion
1/2 tsp. salt
Preparation

Combine potatoes and eggs.
Mix sour cream and Italian dressing.
Add to potato mixture, tossing lightly.
Set aside. Combine cottage cheese, celery, radishes, olives, green onion and salt.
Toss with potato mixture.
Pack into a 5-cup ring mold. Chill.
Unmold and garnish with tomato wedges and parsley.
