Apricot Pineapple Jam - cooking recipe

Ingredients
    1 (11 oz.) pkg. dried apricots (2 c.)
    1 (1 lb. 4 1/2 oz.) can crushed pineapple (undrained)
    1/2 lemon, sliced and quartered
    4 c. sugar
Preparation
    Rinse apricots; simmer, covered, in 2 1/2 cups of water until tender.
    Mash apricots.
    Add pineapple, lemon and sugar.
    Simmer, stirring frequently, until thick and clear, about 45 minutes. Ladle into hot scalded jars.
    Seal.
    Makes about six 1/2-pint jars.
